Video: Harvest Root Crops

These are parsnips.

It’s finally time to harvest root crops so that is the topic of this week’s video. In it, I harvest carrots, parsnips, beets and potatoes (with Bill’s able assistance, I might add!). You’ll get to see how each variety performed and I also explain how we store our root crops through the winter.

I always wait to harvest root crops until we get some hard frosts. That’s because the frosts cause the starches in the roots to convert to sugars. What a difference that makes in their flavor!

I also included some special tips on growing root crops so that you’ll have the best success with them.
