Swiss chard is an excellent and productive cool season crop.

It’s finally time to plant cool season vegetable crops in our zone 5b/6a garden! This is always such a delightful milestone in any garden season, right? And if you’re like me, you probably thought this day would never come. But we’re here and let’s get down to business!

Our weather here in Spokane, Wash. has been relatively mild lately. That totally adds to my enjoyment of being outside, playing in the dirt! (yeah, I know, “soil” is the more proper term but that doesn’t sound as fun as dirt does)

As I explain in my video, cool-season crops tolerate chillier temperatures in early spring and the fall. Examples include:

  • Arugula
  • Beets
  • Broccoli
  • Cabbage
  • Cauliflower
  • Chard
  • Kale
  • Kohlrabi
  • Leeks
  • Lettuce
  • Onions & shallots
  • Pak choi
  • Parsnips
  • Peas
  • Radishes
  • Rutabagas
  • Spinach
  • Turnips

These are the cool season vegetable crops I planted in this video:

  • Beets ‘Golden’ and ‘Cylindra’
  • Chard ‘Garden Rainbow’
  • Peas ‘Green Arrow’ shelling pea and ‘Sugar Magnolia Purple’ snap peas
  • Carrots ‘Dolciva’, ‘Narvik’ and ‘Tendersweet’
  • Pak choi ‘Bopak’
  • Parsnips ‘Hollow Crown’
  • Radishes ‘French Breakfast’
  • Turnips ‘Mikado’

I planted all but the pak choi from seed, directly in the garden, on April 6. Bill started the pak choi indoors a couple of weeks before that. And he hardened them off as they were growing in seed-starting trays.

Now, before I forget, be sure to pay close attention at 10:07 into the video. You’ll see one of my garden buddies!
